Hearty Oatmeal Pancakes
Looking for a recipe for hearty pancakes that will stick with you all morning? With oatmeal and Greek yogurt in them, these will keep you going for a long time!
This recipe makes 20-25 pancakes, and can be topped in a variety of ways! We topped some with cinnamon applesauce, some with maple syrup, and added chocolate chips to some and topped them with peanut butter! YUM!!!
Ingredients:
1½ cup quick oatmeal
1 cup milk
1 cup plain Greek yogurt
3 cups flour
1½ teaspoons baking soda
1½ teaspoons salt
2/3 cup brown sugar
3 eggs
1/3 cup olive oil
1 cup milk
Directions:
- Mix together the oatmeal, 1 cup of milk and the Greek yogurt. Set aside so the oatmeal can soften while you mix up the dry ingredients.
- Mix together the dry ingredients in a large bowl.
- Mix the remaining wet ingredients into the oatmeal mixture. Add to the dry ingredients and stir well. You will probably need to add more milk as you go. The oatmeal tends to soak it up and make the batter too thick.
- Using a ½ cup scoop, form pancakes on a hot, buttered skillet. You might need to pour it out and then gently flatten it out in a circle.
- Once the bottom is cooked, flip and cook the other side. Enjoy topped with whatever yummy toppings you can think of!
